Avocado Bruschetta deluxe – Quick recipes from my kitchen
This avocado bruschetta tastes sensational. Toasted bread is rubbed with garlic and topped with avocado, caramelized tomatoes and mozzarella. Sooo good!
The other day, I was standing in the kitchen in the evening, making supper, and in the background was the radio. The man on the radio reported on a study stating that dinner is dying out in Germany. He did not mean that we would not have dinner anymore. It changes the content of the dinner.
Traditionally, as the word supper already says, bread was eaten in the evening – a cold meal. According to the study, more and more Germans take their main meal in the evening. In the evening it is eaten warm more and more often.

At home, dinner is still 75% cold. There are days when we are more hungry because we did not have the opportunity to have a bigger meal during the day. Mostly it is cold.
But I have to say that we rarely have only “bread” with sausage and cheese. This happens at most, if we have a delicious fresh bread, which actually needs nothing more. Usually we have a salad in the evening but sometimes also a delicious spread or a warm snack, like baked cheese or quesadilla. So we spice up the good old dinner. 🙂
A delicious slice – avocado bruschetta deluxe
If you have bread from the day before and ripe avocado, then this recipe is perfect for you!
The preparation is very easy. You roast your bread and coat it with a clove of garlic. Just the smell of it is simply sensational.
Now halve the tomatoes, dip them with the cut surface in the sugar and caramelize the whole thing briefly in the pan.
For the avocado mush, crush the ripe avocados with a fork, add lemon juice, salt and pepper and stir. Together with the diced mozzarella you build your own avocado bruschetta.
Well, I would say, this cut is a good reason not to sweep the traditional dinner yet under the table.
This bruschetta takes a maximum of 15 minutes in the preparation and the recipe makes 2 people full.
How many slices of bread you need depends on the size of your bread. I used a 500 g spelled wholemeal bread, so rather a small bread. I have used 5 slices of bread with the given amount.

150 g of cocktail tomatoes
2 EL cane sugar (old household sugar)
4 Slices of bread (for example spelled whole grain bread)
1 Garlic clove
2 ripe avocado
2 Teaspoon lemon juice
1 Ball mozzarella
Wash the tomatoes and halve them. With the cut surface dip her the tomato in the sugar.
In a large pan you heat 3 tablespoons of olive oil. When the oil is hot, add the tomatoes with the cut surface down to the pan. Attention, that can spurt something.
Let the tomatoes caramelize for 2-3 minutes. Then take it off the stove.
Toast the bread slices in the toaster or oven. Meanwhile, peel the garlic. Rub the garlic over the toasted bread.
In a bowl crush 2 avocados and season with lemon juice, salt and pepper.
Cut the mozzarella into small cubes.
Now you build the avocado bruschetta together. On the bottom of the bread you scratch the crushed avocado, on top of it come the tomatoes and mozzarella. Season with salt and pepper before serving.
